Transform regular veggies and dip into royally awesome KNIGHT swords and PRINCESS dip. This is one of the few instances where you can encourage kids to play–or joust–with their food!

What You’ll Need
1 Cup store bought hummus
½ Tsp beetroot powder
4 Carrots, peeled
4 Asparagus stalks
4 Green beans
1 Persian cucumber
1/2 Red bell pepper
4 Sprigs flat parsley, stemmed
5 Leaves of radicchio
5 Cauliflower florets
Paring knife
Straw
1″ Heart shaped cookie cutter
How to Make
Note: Use photos for reference when shaping ingredients and arranging them on the platter.
Step 1: Prep the ingredients:
Combine the beetroot powder and hummus until fully mixed.
Cut the carrots into 5″ pieces, keeping the pointed ends intact. Cut a 1 1/2″ perimeter off the base of each carrot to create the sword hilt.
Trim and cut the asparagus and green beans to equal length.
Slice the cucumber into even rounds and use the straw to poke a hole through the center of each slice.
Use the cookie cutter to cut a heart shape out of the red pepper.
Step 2: Gently insert the non-pointed side of each carrot, asparagus stalk, and green bean through the cucumber rounds.
Step 3: Arrange the swords on a platter with the beet hummus. Decorate with the parsley, red pepper pepper, radicchio, and cauliflower!
