Don’t let those latkes be all plain and lonely. Dip them in a delightfully sweet blueberry applesauce, compliments of Periwinkle.
What You’ll Need
- 8 large apples
- 2 c. blueberries
- ¾ c. sugar or honey
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
How to Make:
Step 1: Combine sugar/honey, cinnamon, and vanilla. Mix well.
Step 2: Peel, core, and slice apples (this is a good job for a grown-up).
Step 3: Combine all ingredients, plus blueberries, into a saucepan and toss to coat (this is a great job for kids).
Step 4: Pour into a greased baking dish, cover with tinfoil, and bake in an oven set at 350 degrees for 45-60 minutes.
Step 5: When done and slightly cooled, mash with a fork, potato masher, or immersion blender depending on the consistency that you like.
